Costco baby potatoes in the instant pot is an easy recipe that just takes less than 15 minutes from start to end. I use the cast iron pan for this recipe in the end to give extra crispiness.
I make potatoes once a week with different spices and flavoring. This time when I happen to see these Costco baby potatoes I can’t resist trying with the instant pot.
I thought to use garlic flavor this time to make these baby potatoes and found I had trader joe’s garlic-flavored olive oil and used it for this instant pot baby potatoes recipe.
These mini potatoes are crispy outside and soft inside and taste amazing when roasted extra 2 minutes in cast iron. I’m sure this instant pot baby potatoes will be a fantastic side dish for any meal.
You can serve these Costco baby potatoes with the instant pot sambar (instant pot lentil stew). I’m serving this baby potato with rice and the instant pot sambar.
INSTANT POT COSTCO BABY POTATOES INGREDIENTS
I used Indian spices and trader joe’s garlic olive oil for this mini potato recipe. You can skip and use your own choice of spices or flavors. Since it’s small potatoes I used a whole. If needed you can cut it into two halves as well.

Instant pot Costco baby potatoes step by step guide.
Wash the baby potatoes in the running water.Drain the water and keep it ready.
Turn on the instant pot to saute mode. Once it displays ‘HOT’.Add 2 tbsp of oil, Wait for a minute and add mustard seeds.
Once the mustard seeds pop up add urad dal and 1 broken red chili. Wait for the urad dal to turn light brown. Add the Costco baby potatoes, salt, chili powder.
Mix all together well and close the lid and set pressure cook or manual for 4 minutes.
Once its completed do a Quick release after 10 minutes.
Check for the salt ,spice etc.If needed add now and turn on the saute mode and cook extra 2 minutes .
After this, I just transfer whole Costco baby potatoes from instant pot to cast iron and roast in medium flame for few minutes until I get the desired crisp. If needed add extra oil for roasting. This step is totally optional.

Saute potato for 2 minutes for all the spice powder to get coated on potatoes.
Add very little water after sautéing else you might get burn sign.
Since it’s baby potatoes, I didn’t peel the skin. However, you can peel the skin if needed.
You can flavor it will any spices you like garam masala, curry powder, garlic powder, etc.

Ingredients
- 1 lb Baby potatoes
- 2 tbsp oil Trader Joes garlic flavored olive oil
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1 number red chili broken into pieces ( optional for extra spice)
- salt to taste
- 4-5 tbsp water
- 1 tsp kashmiri chilli powder
- 1/2 tsp turmeric powder
- 1 tsp coriander powder optional
Instructions

Wash the baby potatoes in the running water. Drain the water and keep it ready.

Turn on the instant pot to saute mode. Once it displays ‘HOT’.Add 2 tbsp of oil, Wait for a minute and add mustard seeds.

Once the mustard seeds pop up add urad dal and 1 broken chili. Wait for the urad dal to turn light brown. Add water and deglaze the pot. This will avoid the instant pot burn notice.

Add the Costco baby potatoes, salt, chili powder.
