We can make a fresh batch of homemade yogurt whenever we needed
Making yogurt at home is very easy and definitely not time-consuming. we make homemade yogurt fresh every day at home in India. After a couple of days, the fresh yogurt will get sour because of the hot weather. The sour yogurt will be used in some Indian recipes like more kuzhambu also known as kadhi in Hindi, They soak the green chilies in the sour yogurt and make pickles called mor milagai, etc.
With the instant pot, it’s definitely a blessing when the outside temperature is low.

Before we go into details, I will tell you the simple process. Add a cup of water, put a trivet inside the stainless pot.
Keep a glass bowl or a bowl of your choice which is instant pot-friendly.
Add the milk. Close the lid and steam for 2 minutes.
Once the pressure settles naturally, open the lid and let the milk cool for 25 minutes.I always set the timer and move onto my other chores.
No thermometer temperature check needed.
Whisk in the yogurt starter culture
After exactly 25 minutes add the yogurt starter culture, stir it well and close the lid and set ‘yogurt’ mode for 8 hours. I don’t remove the top layer of the milk
What can I use as a yogurt starter?
Add few tablespoons of leftover homemade yogurt or use a store-bought yogurt or make your instant pot yogurt starter
Your homemade yogurt is ready to serve.
How to make homemade yogurt?
If you don’t have the instant pot just boil the milk on a stovetop and let it cool for 30- 35 minutes, later add the culture.
Close it with a lid and place it in a corner without any disturbance within a day, your homemade yogurt is ready.

Once the yogurt is ready,place a large strainer with cheesecloth over a large bowl.
Allow the yogurt to drain for a few hours. After a few hours, the whey and the thick yogurt will be separated. Your Greek yogurt will be ready to store.

Do’s and dont’s for making instant pot yogurt
You can make this homemade yogurt recipe directly in the inner pot using yogurt mode. Press the yogurt mode couple of times to set boil mode to boil the milk. Make sure the inner pot is sterilized else the previous food smell will transfer to the yogurt. After boiling you can leave it open for 25 minutes and add the yogurt culture and close the lid and set it to yogurt mode for 8 hours.
Don’t add too much of yogurt culture just one tablespoon is sufficient.
Don’t use flavored yogurt like vanilla yogurt as a starter.
If you want sour yogurt keep it in the instant pot for few more hours.
