Adai(Thick) dosa recipe or lentil pancakes is a high protein low carb recipe. These vegan lentil pancakes are easy to make it on the same day.
Adai dosa recipe is made of using varieties of lentils like toor dal, urad dal, and chana dal and rice and red chilies. Adai tastes great with the aviyal(Vegetable Stew).
To make adai dosa recipe we need to soak the lentils,rice and chilli for a minimum of three hours and grind it into a coarse paste with a pinch of hing(since lentils cause gas) and salt.
Today when i asked my husband what he wants for dinner he said adai(indian lentil pancake) and we love the adai batter fermented little to get that tangy taste. The instant pot came as a savior to ferment it quicker using yogurt mode.
These high protein indian lentil pancakes are gluten free, vegan, and vegetarian.
How to make adai dosa recipe?

You can have this adai just like that or add some finely chopped onions, cabbage mixed in the batter will make it taste great. You can even add moringa leaves in the batter and have it cooked like crepes. We normally have adai weekly once in breakfast since its high in protein.
How to make adai dosa batter ?
Wash and soak rice, red chillies and fenugreek seeds in a bowl with enough water for minimum three hours
Wash and soak chana dal ,toor dal and urad dal in a bowl with enough water for minimumof three hours
Drain the water completely
Grind the rice, red chilies, and fenugreek seeds with little water and transfer into a bowl.
Grind the lentils in the blender by adding water little by little into a coarse paste.
Mix both the batter and add salt and hing. Make sure the batter is thick and not watery consistency.
Keep this to ferment for one-two hours. I used instant pot yogurt mode to ferment the batter.
How to make adai dosa | Lentil Pancakes
Heat the pan and grease it with little oil .Sprinkle some water to see the pan is hot enough to pour the batter.If you see some bubbles pop up the pan is ready to make savoury lentil pancakes.
Now pour the batter in center of the pan and spread the batter quickly like you make dosa.
Add few drops of ghee or oil to the sides of the batter.
You can close it will the lid for few seconds to steam the other side quickly.
Flip and cook again on the other side.
Make sure your adai | lentil pancake is cooked well on both the sides before serving.
The best side dish for adai or kara dosa is adai avial(Vegetable stew) or jaggery with some butter.

- 1 cup raw rice
- 1/2 cup chana dal 1/2 cup
- 1/4 cup toor dhal 1/4 cup
- 1/4 cup urad dhal 1/4 cup

Recipe Notes
- Before making this lentil pancake you can add onion,cabbage ,curry leaves ,cilantro into the batter and mix it well.
- You can increase or decrease spice according to your taste.
- If you feel the batter is not too spicy add few thinly sliced green chillies.
