Growing up in southern India where coconut trees are abundant in our Indian homes. So we add coconuts to most of the recipes to make the food more flavorful and healthy.
There were days when we come home hungry after school and our grandma just use the morning leftover rice and make this yummy coconut rice.Recollecting those memories today I decided to make this Indian coconut rice recipe using leftover rice.
South Indian coconut rice | Easy coconut rice | Quick coconut rice
This is a very simple and easy south Indian coconut rice in instant pot. I’m using leftover sona masoori rice to make this instant pot coconut rice. We use only sona masoori rice or raw rice to make any variety of rice like coconut rice, lemon rice, etc. Please see the recipe below to make perfect sona masoori rice.

We don’t eat coconut or coconut products for dinner because it’s not advised as per Ayurveda. Mostly coconuts are taken during the morning or afternoon only.
This coconut rice recipe south Indian is a very famous south Indian recipe because of abundant coconut trees. So we add coconut to all curries, make coconut chutney, mix with rice, etc. Using fresh coconut to make this instant pot coconut rice recipe is highly recommended when compared to desiccated coconut or frozen coconut.

Definitely you can make this recipe using a rice cooker. Just pre-cook the rice in a rice cooker. Once you have pre-cooked and kept the rice. You can make this recipe in minutes and serve the guest with some potato chips or fryums.
Is this a coconut milk rice recipe?
No coconut milk rice recipe is totally a different recipe. This is using coconut. I will share the coconut milk rice recipe in the upcoming days.
This is kind of a sweet coconut rice recipe with little savory but the taste purely depends on the quality of the coconut.
Okay now, let’ss make the coconut rice in instant pot!
Turn on the instant pot to saute mode. Once it displays hot add coconut oil after a minute add mustard seeds.
Once the mustard seeds crackle add finely chopped green chili and a pinch of hing.Then add the cashew nut, urad dal, chana dal. Wait for it to turn golden brown. If you have curry leaves you can add at this stage.
If you are using freshly grated coconut. Please add it now and saute for one or two minutes. Don’t make it brown.
Turn off the instapot and add the cooked rice, salt. Mix everything well.
Serve the coconut rice with the pappads or fryums or any curry of your choice.
Some alternatives to make south Indian coconut rice
- If you are using desiccated coconut to make coconut rice. Please add after adding rice.
- You can also add peanuts instead of cashew nuts but not both.
- You can replace green chili with red chili if you don’t have any.
- Instead of sona masoori rice, you can substitute with basmati rice, raw rice, jasmine rice. The aroma of the rice may dominate the taste more.

Easy and delicious instant pot coconut rice with leftover rice. Coconut rice in instant pot or pressure cooker will be ready in minutes.
Ingredients
- 3 cups cooked sona masoori rice or raw rice
- 1.5 tbsp coconut oil
- 1 string curry leaves
- 10 numbers raw and unsalted cashews
- 1 tsp mustard seeds
- 1-2 numbers green chilli (finely chopped)
- 1/4 tsp hing
- 1 tsp urad dal
- 1 tsp chana dal
- 1/2-2/4 cup coconut shredded desiccated or fresh
- salt to taste
