Instant pot milagu(black pepper) kuzhambu Iyengar

Milagu kuzhambu also known as pepper kuzhambu is a very healthy and age-old south Indian traditional recipe prepared with black pepper, tamarind water, etc. This iyengar style milagu kuzhambu is a spicy and tangy recipe. So a small amount of milagu kuzhambu is sufficient when you add to rice.

Traditionally this is a sattvic recipe so no onion and no garlic are used.

Now let us see how to make this milagu kuzhambu Iyengar style using instant pot.

Milagu kuzhambu preparation :

Soak tamarind in warm water for 15 minutes, extract the juice, discard the pulp, and keep it ready to make milagu kuzhambu. You can use the store-bought tamarind paste for this instant pot milagu kuzhambu recipe.

Today I’m using tamarind paste to make this milagu kuzhambu recipe.

If you are using garlic peel the skin and keep it ready.

Roast and grind all the ingredients mentioned in the recipe For Grinding and keep it ready.

How to make instant pot milagu kulambu iyengar recipe

Turn on the instant pot to sauté mode and roast all the ingredients mentioned in the recipe for grinding and let it cool down completely and grind it into a coarse powder. Your milagu kuzhambu powder to make this milagu kuzhambu is ready.

Turn on the instant pot again in sauté mode once it displays ‘HOT” add around 3 tbsp of sesame oil.

Ingredients

  • 3 tbsp sesame oil
  • 1 tbsp tamarind paste
  • a pinch turmeric powder
  • salt to taste

To roast and grind

  • 2 tbsp black pepper
  • 1 tbsp cumin seeds
  • 1/4 tsp urad dal
  • 1/4 tsp fenugreek seeds
  • 2 numbers red chilli
  • curry leaves one fistful (optional)

Instructions

  1. Roast all the ingredients mentioned under roast and grind.Let it cool down completely.Grind it into a coarse paste and keep it ready.

  2. Turn on the instant pot to saute mode.Once it displays 'HOT' add the sesame oil ,mustard seeds.

  3. Once the mustard seed crackles add the grounded paste ,tamarind paste ,salt,turmeric powder and 2 cups of water.

  4. Close the lid and pressure cook for 4 minutes.

  5. Do a natural release .Open the instant pot and see the milagu kuzhambu become thick and the oil we added in the beginning should float on top.If you feel watery cook in saute mode until you get the right consistency.

Recipe Notes

Since it is made into a thick paste you can store it for one week.

Tastes Yummy with hot rice and ghee.
