Having lots of 10 bean soup or 12 bean soup or 15 bean soup mix and want to try something new ? Try this savory pancake recipe.
Being a vegetarian and making sure kids get enough protein in all meals makes me try and test new recipes with lentils, legumes, and beans. This savoury pancake recipe is one enjoyed by my whole family with some vegetable stew or butter and jaggery.
I experimented like we do adai (lentil pancakes) and this turned out great to my surprise. With Vitamix and instant pot, it’s definitely a breeze. When you make this batter little thick this is a savory pancake and add little more water the same recipe can be converted to vegan crepe.
Wash the bean mix a few times in running water and soak it with enough water separately. In another bowl Wash and soak the rice, fenugreek seeds , urad dal,red chilies with enough water for 3- 6 hours
Drain the water completely. Add everything together into the blender with garlic, cumin seeds and grind it into a coarse paste. Add water little by little.
If you are using Vitamix please use 3-4 ice cubes while grinding and I used smoothie mode.
Now add the required amount of salt. Adding salt at this stage will help in fermentation. For fermentation, I placed the batter in the instant pot (Yogurt mode) for 3 hrs. You can skip this step and do the savory pancake directly in the pan. We like the batter little fermented so I do this step always. Add chopped onions, cilantro and mix it with the batter.
Take a griddle or a pan. Once it turns hot add a drop of oil and spread it across the pan so that the pancake will coming easy without sticking.
Take a ladle of batter and make a circle in the center of the pan. After few seconds pour oil across the sides of the savory pancake. Use a lid and close it for a few seconds so that it gets cooked on both sides.
Take off the lid and flip the pancake other side and add a few drops of oil to get the crispness. Your savory pancake is ready to serve.
This savoury pancake recipe is packed with protein. I have added one cup of bean soup mix and 1 cup of rice. If you are on a low carb diet and looking for low carb pancakes feel free to reduce the rice quantity. My toddler enjoys this as dinner pancakes.
