You will fall in love with this yummy baby potatoes in the instant pot. During my shopping, I couldn’t resist buying these mini potatoes so I made sure this weekend I want to make some crunchy outside and soft inside Indian potato curry.
Instant pot steamed potatoes option is the best when you want to make perfect potato curry. These small potatoes instant pot cooked to the perfection as I wanted.
These instant pot baby potatoes are steamed for 5 minutes to get the crisp outer layer when shallow fried in cast iron pan and if you are looking for the instant pot mashed potatoes please use this recipe setting.
You have to try this super easy, zero monitoring instant pot mini potatoes. I have used a food network steamer that has mini partitions to steam more than one at a time. Check out my post on the instant pot steamer basket
You can use any instant pot steamer basket to make this baby potatoes in instant pot.Cooking directly on the inner pot makes the potatoes soggy at times or a burnt bottom to avoid that i use instant pot steamer basket to make this potato curry.

instant pot steamed potatoes
Turn on the instant pot and add around one cup of water to the inner pot
Now place the trivet and top of it place the stainless steel steamer basket in instant pot pressure cooker
Add the baby potatoes in the steamer basket
close the lid and set steam ,high ,5 minutes.If you have old type of instant pot dont forget to turn the venting knob to sealing position.
This gives you a hard outside and soft inside potatoes with these settings. If you want creamier and super-soft baby potatoes then steam for 15 minutes and do a natural release.

Peel the skin of the baby potatoes and keep it ready.
You can do this instant pot baby potatoes curry recipe in sauté mode or stovetop.
Instant pot method: instant pot mini potato curry
Turn on the instant pot in saute mode .Once it displays hot add a tbsp of oil.
Add some mustard seeds, urad dal. Wait for the mustard seeds to crackle and urad dal to turn light brown.
Add chopped onion and saute for few minutes until the onion turns translucent. Now add turmeric powder, chili powder, and salt to taste and saute for 2 minutes.
Add the steamed potatoes and saute for few minutes until you want the desired consistency.

Kashmiri chili powder used in Indian cooking gives a nice color but doesn’t give a lot of heat.
Stovetop method: Instant pot baby potato curry
Follow all the step mentioned in instant pot method on the stovetop.
I prefer doing this instant pot potato curry in cast iron for two reasons
- It gives nice crispiness to the potato outer layer.
- Potato is a starchy vegetable and it sticks to the bottom of the stainless pan.

- 1.5 lbs baby potato
- 1 cup water

- 1 tsp mustard seeds optional
- 1 tsp urad dal optional
- 1 number onion chopped
- 1/4 tsp turmeric powder
- 1 tsp chili powder Kashmiri chili powder gives a nice color but less spicy
