Rinse the basmati rice in running water and soak it in water for 10 minutes.
After 10 minutes drain the water completely.
Turn on the instant pot and press ‘saute’ mode. Once it shows hot, add the sesame oil, add garlic and fry till it turns into medium brown color.
Add green chili, spring onion bulb, vegetables and saute for a minute. Add vinegar, soya sauce, rice, salt, and water. Mix it well and set manual/pressure cook for 6 minutes.
Do a QR(quick release) after 2 minutes. Add the stems of spring onion and serve with onion raita or your favorite Manchurian. Your vegetable fried rice Indian is ready to serve.

- 3 numbers garlic pods finely chopped
- 1 bunch spring onion finely chopped
