Appe recipe is also known as kuzhi paniyaram is a traditional snack of south Indian homes.
Few Indian homes enjoy this recipe for breakfast as well. We make this rice appe or paniyaram sometimes with the leftover idli or dosa batter too.
We have a pan called appe pan also called an aebleskiver pan to make this recipe. When you add the batter in the appe pan with a little bit of oil and cook, the rice appe will turn crisp outside and soft inside and tastes delicious you can’t stop with one. Normally the appe batter fermentation will take up to 8 hours with the instant pot we can make the appe batter fermentation quicker using yogurt mode. Once the batter is fermented we make the tempering with oil, mustard seeds, green chili, onion, urad dal, etc. This appe is a savory version you can also make sweet version.

We enjoy this recipe with coconut chutney, onion – tomato chutney, or even with some instant pot sambar. Make sure you serve this rice appe hot and fresh else it will become soggy. To make it healthier I add some shredded vegetables like beets, carrots as well so the picky eaters will also enjoy the appe.
Step by step guide to make instant pot rice appe recipe | Kuzhi paniyaram recipe
First let’s wash and soak masoori rice or raw rice, idli rice, urad dal, fenugreek seeds together, and sago separately. We need to soak this for a minimum of 3 hours.
Grind all the ingredients together into a fine paste. I’m using my Vitamix to make the batter. If you have ascent series use smoothie mode to make it a fine paste. Add salt and mix it well.
You can ferment the batter naturally to make this appe or use the instant pot to ferment the kuzhi paniyaram batter.
We will use yogurt mode to ferment the appe batter sooner.
Once the batter is fermented we need to do seasoning to make the appe paniyaram even tastier.

Instant pot rice appe seasoning
Take a pan and add around 1 tbsp of oil and add the mustard seeds to the crackle. Add the urad dal, curry leaves, green chili, onion, coriander leaves, and saute until the raw smell of onion goes off.
Add the seasoning into the fermented appebatter. Make sure the batter is of dosa consistency.
If the batter becomes too watery add little rice flour.
How to make rice appe recipe
Kuzhi paniyaram | appe with dosa batter
Heat the Aebleskiver/Ebelskiver pan with few drops of oil in each mold. Once the pan turns hot add the batter to three fourth of the mold.
Cover and cook with the lid for a few minutes.Once the batter is cooked on one side turn the batter with the stick to the other side. Wait for few minutes for both sides to be cooked.
Serve the paniyaram with onion tomato chutney.

Instant pot yogurt mode fermentation

Turn on the instant pot and add around 1 cup of water to the inner pot

Place the appe batter bowl to the inner pot and close the lid

Turn on the instant pot yogurt mode and set it to 8 hours

After 6-8 hours, your batter will be fermented and ready to make appe
